Kristina is the mastermind behind the inspiring blog, Mindfully Bliss, and the wildly popular IG account (@katrinanerisse_). She focuses on vegan living and recipes; health, wellness and nutrition; social activism; and how to be happy, inside and out. Kristina aims to educate people about vegan and plant based living, including the benefits this lifestyle offers the planet.
Kristina agreed to spend a few virtual minutes with me to answer some questions as part of my “5 Minutes with…” series, which has been a wonderful way to connect with like-minded (and downright lovely) people in the vegan community.
So without further ado:
Q: What’s the last thing you ate?
A: I had pasta for dinner a few hours ago. Actually, I just ate a cob of corn five minutes ago. So corn.
Q: Which vegan chef do you most admire and why?
A: I absolutely love Dana from Minimalist Baker because all of her recipes are super easy and require minimal ingredients. And they’re just so damn tasty!
Q: What’s the one dish you’ve created that’s scored you the most high fives?
A: I made a chocolate cake once, and my family said it was the best thing I ever made. Also, many people like my homemade granola.
Q. What do you want to be when you grow up?
A. Well, unfortunately I turn 21 this year (but I still think I’m seventeen) so I’m practically a grown-up, although what is even considered ‘grown-up’? Are we ever really truly grown up? Anyway, I want to be a writer. I want to have all my books published and write screenplays for films. Super rad dreams, right?
Q. What’s the one ingredient can’t you live without?
A. Ingredient as in food? Uh, banana, because I use it to make nana ice cream or smoothies every single day.
Q. Do vegans have more fun?
A. HELL YES! AND WE SAVE THE PLANET, THE ANIMALS, AND IMPROVE OUR HEALTH WHILE DOING SO!!
Q. What kitchen item do you most often buy for wedding gifts?
I’ve only been to one wedding and I was fourteen, so nothing hahaha. But I’d probably buy someone a blender, because… smoothies. Or a hand mixer. Or some nice plates. I don’t know.
Q. Where’s the last place you went to on a date? (and what did you order?)
Q. Did becoming vegan bring out any unexpected character traits in you? i.e. are you funnier now than ever before?
A. Being vegan has made me more compassion and down to earth. Ever since becoming vegan, I’ve become more spiritual and connected with the earth. It’s a cool feeling.
Q. What’s the one thing you wish more people knew about vegan food?
A. That it isn’t weird or gross or abnormal. It really irks me when people try a vegan dish or dessert and say, “wow! This is really good… for vegan food”, like it’s some weird, abnormal substance from another planet. It’s literally just baked goods without cow milk and chicken eggs…. You can easily substitute cow milk or almond/coconut/soy milk, etc, and use flaxegg or chia egg, or egg replacements. Like, WOW, SO WEIRDD!!!!
Also, that vegan food is more than just vegetables and ‘leaves’ as people seem to believe. You can make literally EVERYTHING that is non-vegan, into a vegan version. Pizza, chicken, fish, steak, buffalo wings, ice cream, cakes, cookies, donuts, scrambled eggs, cheese, etc. Literally ANYTHING!
